Marinated Tomato and Burrata Summer Salad

Ingredients

  • 3 teaspoons Garlic Minced
  • 2 teaspoons Shallots Minced
  • 2 teaspoons Dried Oregano
  • 2 teaspoons Dried Parsley
  • 1/2 teaspoon Freshly Cracked Black Pepper
  • 1/2 teaspoon Kosher Salt
  • 1/4 cup Red Wine Vinegar
  • 2 Tablespoons Finely Shredded Parmesan Cheese
  • 1 cup Extra Virgin Olive Oil
  • 3-4 cups of Tomatoes
  • 8 oz Burrata
 
》 Directions
 
Combine all ingredients in a food processor/blender except the olive oil and whirl together for 1-2 minutes until everything is finely chopped. While the food processor is still running, stream in the olive oil until fully incorporated. Cut tomatoes into quarters, toss in the vinaigrette.  tear burrata and place on top.  Serve at room temperature.  You should have some leftover vinaigrette to use for salads and marinades later on.
